THE JUANE This jungle dish has its origin in Moyobamba and bears the name of juane, in homage to San Juan Bautista, it is very popular to offer it during the saint's festivities, which is celebrated at the end of June, throughout the jungle of Peru. There are some varieties of juanes such as: - "Avispa juane" can be eaten in Moyobamba, Tarapoto, Pucallpa, Iquitos and in different places in the Peruvian Jungle, ground pork is added to the rice and with it the dough is prepared, filling it with a fried chicken prey. - "Nina juane" is a juane that has chicken pieces with beaten egg instead of rice. - “Sara juane” instead of rice has a mixture of raw ground peanuts, ground corn and chicken broth. - "Juane de chonta" the juane de chonta is one of the most consumed typical dishes on Easter days, besides having a delicious flavor, chopped chonta is added to the rice mixture. - “Juane de yuca” with the traditional flavor of the Amazon region, so succulent and...
